Recipe 1

Chicken Masala without Oil

Ingredients

Chicken 1 kg
Onion 3 small (sliced)
Yogurt 1 cup
Ginger garlic paste 2 tsp
Green chilies 4 (slit)
Red chili powder 1 tsp
Cumin seeds 2 tsp
Coriander powder 1 tsp
Garam masala powder ½ tsp
Salt to taste
Vinegar 1 tsp

Directions

Mix together chicken. Lemon juice and onion slices and leave for 1 hour.
Add yogurt in a bowl and mix in ginger garlic paste, green chilies, red chili powder, cumin seeds, coriander powder, garam masala powder, salt and vinegar.
Take a non stick pan shift chicken mixture and pour over spiced yogurt.
Cover and cook until chicken tender.
Garnish with coriander leaves and serve.

Recipe 2

Fish Curry

Ingredients

Fish ½ kg
Tamarind pulp 1 cup
Onion 1 big (chopped)
Tomato 2 (chopped)
Coconut powder 2 tbsp
Green chili 2
Turmeric 1 tsp
Red chili powder 2 tsp
Salt to taste
Water ½ cup
Curry leaves 2

Directions

Add fish in a bowl along tamarind juice and leave for 5 minutes.
Now put fish in cooking pan with all other ingredients.
Allow to cook until fish tender. Serve warm with boiled rice.

Recipe 3

Tofu and Cashew Mayonnaise

Ingredients

To Make the Mayo

Firm tofu 12 ounces
Cashew paste ½ cup
Lemon juice 1 tsp
Mustard powder 1 tsp
Salt to taste
Black pepper to taste
Sugar 1 tsp
Wasabi paste ¼ tsp

To Make Vegetable Mayo Dip

Olive oil 1 tsp
Garlic 2 tsp
Baby corn ¼ cup
Mushrooms ¼ cup
Red bell pepper ¼ cup
Green bell pepper ¼ cup
Thyme a few springs
Cherry tomato 4
Basil leaves for garnish

Directions

To Make the Mayo

Drain water from tofu and put it in blender with cashew paste, lemon juice, mustard powder, salt and black pepper.
Blend at highest speed until light and creamy.
Now in add sugar and wasabi paste; blend again.
Serve it with crackers or use for sandwiches.

To Make Vegetable Mayo Dip

Heat olive oil in a pan, saute garlic, mushrooms, baby corn and bell peppers till they get translucent. Add a few sprigs of thyme.
Blend all until combine nicely.
Garnish with cherry tomato and basil leaves; serve with crackers.

Kanyakumari Fish Curry

Ingredients

Whole fish 1
Scrapped coconut 1 cup
Red chili powder 1 tsp
Coriander powder 1 tsp
Turmeric powder ¼ tsp
Black peppercorns ½ tsp
Shallots 2-3 (chopped)
Few curry leaves
Green chilies 2
Tomato 2
Tamarind ¼ cup
Lemon 1

Directions

Grind the coconut, chili powder, coriander powder, turmeric, black pepper cones into a paste.
Include shallots in this paste and blend again.
In a pan add paste, tamarind pulp, green chili, tomato and salt. Allow to boil.
Now add fish and curry leaves. Mix it. Let it simmer for 10 minutes. Serve.

Creamy Chicken (Murgh Malai)

Ingredients

For the Chicken Marinade

Chicken drumsticks 5
Ginger garlic paste 2 tsp
White pepper powder 2 tsp

For the Gravy

Cream 1 cup
Green chili 3 (chopped)
Onion 1 (chopped)
Milk 2 ½ cups
Green cardamom powder 1 tsp
Chopped ginger 1 tsp
Chopped coriander leaves 2 tbsp
White pepper powder 1 tsp
Kasoori methi 1 tsp
Salt to taste
Garam masala powder 2 tsp
Almonds 2 tsp (chopped)

Directions

Marinade chicken with ginger garlic paste and white pepper powder for 30 minutes.

For the Gravy

Heat a pan, add cream, green chili and onion; cook until onion gets soft.
Now add in milk and marinade chicken. Cook for 2 minutes.
Add green cardamom powder, chopped ginger, chopped coriander, white pepper, and kasoori methi.
Cook until chicken tender. Add salt and mix.
Sprinkle garam masala powder, garnish with chopped almonds and serve.
